Åland pancake with cinnamon

Åland pancake is a classic dessert from the Åland island in the Finnish archipelago. This version is made from rice porridge and oat flour to enhance carbohydrate absorption.

Rice is an easily digestible source of carbohydrates. Oat has water-soluble beta-glucan fibre that evens out the absorption of energy. Cinnamon can also help level blood sugar and thus keep energy levels up during long runs or bike rides. 

Åland pancake

(4 servings)

1dl porridge rice
0.5l water
1tsp salt
3 cinnamon sticks

Bring the water and spices to boil. Add rice and let boil for 15 minutes. Pour out excess water, let cinnamon sticks stay in the porridge while it cools down.

4dl rice milk
rice porridge
2tbsp brown butter (optional)
2dl gluten-free oat flour
0.5dl potato flour
0.5 tsp baking powder
1 ts cinnamon
0.5 tsp cardamom
0.5 tsp salt
2 tbsp sugar

Mix all ingredients and let sit for 10 minutes. Line an oven tray with a baking sheet and pour the mixture in. Put in oven (220C) for 30-40 minutes until brown. Serve with jam.
